Food Allergy vs. Food Intolerance

What is a Food Allergy?

A food allergy occurs when your body's immune system creates an allergy antibody to a food you have consumed. As an example, if you are allergic to shellfish and eat a bit of crab, your body will create immunoglobulin E (IgE) antibodies to the crab. Then the IgE will bind allergy cells and the food protein, causing histamines as well as other chemicals to be released. This is when your body experiences an allergic reaction.

What is a Food Intolerance?

When your body has a negative reaction to a food and it does not involve the immune system, a food intolerance results.  An example of a common food intolerance is lactose intolerance.  This is when the body cannot properly digest the lactose in milk.  Antibodies are not formed against the lactose, thus making it an intolerance rather than an allergy.
